Easy Oven-Roasted Veggies!

I saw this recipe floating around the internet and thought I would try my hand at it after seeing that the two main ingredients were on sale at the grocery store :-)

It couldn't have been easier (OR more delicious)! So if you are interested, here's the how- to on:

Oven-Roasted Zucchini & Yellow Squash
(I used 2 of each in an 8x8 baking dish.)
 Wash them.
 Peel them.

 Slice them into 1/4 inch pieces.
 Place slices in your baking dish, alternating between zucchini & yellow squash.
 Drizzle 2 tablespoons EVOO over top.
 Sprinkle with pepper and salt. I added lots of pepper.
 Bake for 30 minutes at 400 degrees.

  1. roasted veggies are my favorite ... i love roasted cauliflower and broccoli ... done the exact same way you did it here ... so delish!!!
